THE FRENCH WAY VINAIGRETTE 
Salt
Pepper, fresh ground
2 tbsp. oil (olive, walnut, vegetable)
1 tbsp. vinegar (Balsamic, wine, herb)
1 clove garlic, minced
1 tbsp. Dijon mustard

In large salad bowl, sprinkle salt and fresh ground pepper to taste. Add mustard. Whisk in the oil, then the vinegar a little at a time until smooth. Finely chop the garlic into the mixture; whisk well. Just before serving, add fresh salad greens; toss well.

Lemon juice can be substituted for vinegar.
