DEFATTED CHEDDAR CHEESE 
Vegetable oil spray
4 oz. sharp cheddar cheese or another natural cheese

Such as Monterey Jack or Gouda, cut into 1/2" cubes.

OVEN METHOD: Preheat oven to 450 degrees.

Select an ovenproof 5" to 6" diameter pan or bowl. Spray thoroughly with vegetable oil spray. Place cheese in greased bowl and add cool tap water to barely cover. Bake 20 minutes, stirring every 5 minutes. Remove from oven and let cool for about 15 minutes. Pour into a fine sieve and rinse under cool running water for about a minute to wash away remaining surface fat. Remove liquid by pressing the palm of your hand against the cheese in the sieve. Refrigerate and use within 3 to 4 days.

MICROWAVE METHOD: Select a 5" or 6" diameter bowl for a microwave oven. Spray thoroughly with vegetable oil spray. Place cheese in greased bowl and add cool tap water to barely cover. Microwave on high setting 3 minutes or until cheese is completely melted, stirring after each minute or cooking. Remove from oven and let cool for about 10 minutes. Pour into a fine sieve and rinse for about 15 seconds under cool running water to wash away remaining surface fat. Remove liquid by pressing the palm of your hand against the cheese in the sieve. Refrigerate and use within 3 to 4 days.

Since microwave ovens vary in power, you may need to adjust your cooking time.
