CRANBERRY - ORANGE SALAD 
1 med. orange
1 1/2 c. raw cranberries
1 tbsp. sugar (opt.)
1 pkg. (4 serving) sugar free Jello, strawberry or orange flavor
3/4 c. boiling water
1/2 c. cold water
Ice cubes

Quarter the orange and remove any seeds and half of the rind. Combine remaining orange and rind and the cranberries in food processor or food grinder and chop finely. Add sugar and set aside.

Dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin and stir until slightly thickened; remove any unmelted ice.

Add fruit mixture. Pour into 8 inch square pan or bowl and chill until set, about 2 hours. Cut into cubes or spoon onto salad greens. Makes 6 servings; 35 calories per serving (without the sugar).
