SQUASH CASSEROLE 
2 c. cooked squash
1/4 c. butter
1/2 c. onion, chopped
1/4 tsp. salt
1/4 tsp. pepper
1 egg, beaten
1/2 c. milk
1 c. cracker crumbs
1 c. packaged stuffing mix
1 c. grated cheese

Mash squash and blend in all ingredients except the cheese. Put in a casserole dish and top with cheese. Bake at 350 degrees for 30 minutes. Serves 6.
