MEXICAN WEDDING COOKIES 
1 c. softened butter
1/2 c. powdered sugar
1 tsp. vanilla extract
1 tsp. almond extract
2 c. flour
1/4 tsp. salt
1 c. finely chopped pecans
Powdered sugar

Cream butter, sugar, vanilla, and almond extracts together. Blend flour, salt, and pecans into butter and sugar mixture. Mix dough until it holds together. Form into 1 inch balls; place on ungreased baking sheet about 1 inch apart. Bake at 400 degrees 10 to 12 minutes or until lightly browned. Cool cookies for a few minutes and roll in powdered sugar several times until well coated. Makes 4 dozen.
