LEMON PUDDING CAKE 
3 tbsp. melted butter
3 tbsp. flour
1 c. sugar
2 eggs
1 c. milk
1 lemon juice
pinch of salt

Mix butter, flour, 3/4 cup sugar and 2 egg yolks. Add milk. Add lemon juice. Stir well.

Beat 2 egg whites with 1/4 cup sugar and a pinch of salt.* Pour into 1 1/2-quart or 1 3/4-quart bowl. Set in pan of water. Put in oven at 325°F for 45 minutes or until browned a little and no indentation of fingerprint left.

*Fold in beaten egg whites to batter.
