LEMON GELATIN PUDDING CAKE 
1 pkg. yellow cake mix
1 (3 3/4 oz.) pkg. lemon gelatin
3/4 c. water
3/4 c. oil
4 eggs
1 1/2 c. sifted confectioners' sugar
1/4 c. lemon juice
1/2 tsp. grated lemon peel

Combine cake mix and gelatin. Add water, oil, and eggs. Beat three minutes on medium speed of mixer. Turn into a 13 x 9 x 2 inch pan that has been greased on the bottom. Bake at 350 degrees (325 degrees if using glass) 40-45 minutes, or until done.

Remove from oven and prick top all over with fork. Pour mixture of confectioners' sugar, lemon juice and peel over hot cake. Makes a moist cake which will keep fresh for a week.
