BEEF STEW | |
2 lbs. beef, cut into 3/4 inch cubes 1/3 c. flour 1 tsp. salt 1 tsp. dry mustard 1/2 lb. bacon 1 pkg. onion soup mix 3 c. water including vegetable liquid 16 oz. can (2 c.) V-8 juice 1 tsp. sugar 29 oz. can homestyle vegetables Coat beef with flour seasoned with salt and mustard. Cut bacon into 1 inch pieces and fry. Remove bacon and add beef to drippings. Brown beef on all sides. Add soup mix and vegetable liquid plus water to give tree cups. Cover and simmer one hour. Add V-8, sugar, and remaining flour to thicken broth. Cover and simmer 45 minutes. Add bacon and vegetables. Heat to serving temperature. |
