PICANTE SURPRISE MUFFINS 
3 to 4 oz. cream cheese
1/3 c. prepared bacon bits
1 c. yellow corn meal
1 c. all-purpose or whole wheat flour
1/4 c. sugar
4 tsp. baking powder
1/4 tsp. salt
1 c. picante sauce
2 eggs, beaten
1/4 c. vegetable oil

Lightly grease or line 12 medium-size muffin cups with paper cups. Cut cream cheese into 12 pieces. Place bacon bits on small plate. Roll each piece of cream cheese in bacon bits to cover. Set aside.

Combine dry ingredients in medium bowl. Add picante sauce, eggs and oil. Stir just until dry ingredients are moistened. Spoon about 1 tablespoon batter into bottom of each muffin cup. Place one piece of cream cheese over batter; top with remaining batter. (Muffin cups will be almost full.) Bake at 425 degrees for 15 minutes. Let stand 10 minutes before serving(cheese will be very hot). Makes one dozen muffins.
