RYE SURPRISE MUFFINS | |
2 c. rye flour 3/4 tsp. baking soda 1 c. unsweetened white grape juice OR 1/4 c. maple syrup & 3/4 c. water 1/8 tsp. vitamin C crystals if use grape juice OR 1/4 tsp. if maple syrup used 2 to 3 tbsp. unsweetened All Fruit jam Preheat oven to 400 degrees. Mix the flour, baking soda and vitamin C crystals in large bowl. Mix juice or maple syrup and water with oil. Pour the liquid mix into the dry ingredients and stir until they are just mixed. Fill 12 oiled and floured muffin cups with 1/3 batter. Add 1/2 teaspoon jam to the center of each muffin cup. Add more batter to fill the cups about 2/3 full. Bake 18-20 minutes. |
