SURPRISE MUFFINS 
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
1 egg
1/4 c. milk
Different flavors of jelly

Sift together first 4 ingredients. Add salt and shortening with pastry blender or fork. Stir egg and milk together and add to flour mixture just until ingredients are well blended. Fill paper or foil muffin cups half full of batter. Drop scant teaspoon of jelly in center of each. Add more batter to fill cups 2/3 full. Bake at 400 degrees for 20 to 25 minutes. Discovering the jelly inside is the surprise, not to mention the fun. Makes 12 muffins.
