SUGAR COOKIES 
1 c. shortening (half butter)
1 c. sugar
1 egg
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. almond extract
2 c. flour, unsifted
1/2 tsp. cream of tartar
1/2 tsp. baking soda

Cream together the shortening, sugar, egg, vanilla and almond extract. Sift the dry ingredients and add to creamed mixture. Roll dough into small balls (roll in sugar) and place 2 inches apart on greased cookie sheet. Grease the bottom of a glass, dip in sugar and flatten each cookie. Dip in sugar each time. Bake in moderate 350 degree oven for 8 to 10 minutes. Nut meal may be added.
