OVEN FRIED CHICKEN 
1 qt. water
1 tsp. salt
6 chicken drumsticks
4 chicken breast halves
1/2 c. buttermilk
3 c. corn flake crumbs
2 to 3 tsp. Creole seasoning
2 tsp. dried Italian seasoning
1/2 tsp. garlic powder
1/8 tsp. black pepper

You will also need vegetable cooking spray.

Combine water and salt in a bowl. Add chicken. Cover and chill for 8 hours. Drain chicken. Rinse with water and pat dry.

Place chicken in shallow dish. Pour buttermilk over chicken, turning pieces to coat. Combine corn flake crumbs and next 4 ingredients in a large, zipper plastic bag. Place 2 pieces chicken in bag at a time; shake to coat completely.

Place chicken, bone side down, in a pan coated with cooking spray. Spray chicken with cooking spray. Place pan on lowest rack in oven.

Bake at 400°F for 45 minutes (do not turn).
