CHEESY VEGETABLE CASSEROLE 
1/2 lb. cheese (cheddar, American, or combo)
1/2 c. butter (1 stick)
1 (16 oz.) bag frozen vegetables, thawed and drained, broccoli, cauliflower, and carrot combo
1 c. (about 30) crushed butler crackers (Ritz or Townhouse)

Put cheese in pan with 1/4 cup butter. Heat over medium heat until melted and smooth. Stir often. Place vegetables in 1 quart casserole. Pour cheese mixture over and mix. Melt remaining butter and stir in cracker crumbs. Add 3/4 of cracker mixture to casserole and sprinkle remaining 1/4 of cracker mixture on top. Bake uncovered at 350 degrees for 20-25 minutes.
