TRAVELING CUPCAKES 
4 sq. semi-sweet baking chocolate
2 sticks butter
1 3/4 c. sugar
1 c. plain flour
4 eggs
2 tsp. vanilla
2 c. chopped pecans

Melt chocolate and butter in heavy pan. (Microwave - 3 minutes.) Add nuts and stir until well coated. In separate bowl, combine sugar, flour, eggs and vanilla. Stir. Do Not Beat. Then add chocolate mixture and stir. Again mix carefully and thoroughly (not beating). Pour into baking cups 2/3 full. Bake at 325 degrees for 25 minutes, no longer.

Since microwave ovens vary in power, you may need to adjust your cooking time.
