VEGETABLE SANDWICH SPREAD | |
1 cucumber 1 tomato 1 onion 1 pt. mayonnaise 1 green bell pepper 1 carrot 1 pkg. (envelope) unflavored gelatin Remove skin from onion, cucumber, tomato and bell pepper; remove seeds from green pepper, tomato and cucumber. Chop vegetables very fine (preferably in food chopper). Soften gelatin in 2 tablespoons water. Mix some mayonnaise to blend. Add remaining mayonnaise to gelatin mixture and combine this with chopped vegetables which have been well drained. Store in jar in refrigerator to season. Make finger sandwiches by spreading mixture on white sandwich bread (or bread of choice). Place on cutting board and trim crust, then cut each sandwich into three sections or "fingers." Place sandwiches in airtight container overnight to season, or may be wrapped in Saran Wrap, then wrap a damp towel around Saran-wrapped sandwiches and place in refrigerator overnight. |
