TEX-MEX MEAT LOAF 
3/4 lb. Velveeta Mexican process cheese spread, cubed
1 1/2 lbs. ground beef
3/4 c. dry bread crumbs
1 egg, beaten
1/4 c. chopped onion
4 tbsp. chopped cilantro or parsley
Dash of pepper
2 tbsp. milk

In large bowl, combine ground beef, crumbs, 1/4 pound Velveeta Mexican, egg, onion, 2 tablespoons cilantro and pepper. Mix well. Shape into loaf in 11 3/4 x 7 1/2 inch baking dish. Bake at 350 degrees 40 to 50 minutes or to desired doneness. Let stand 5 minutes.

Combine remaining Velveeta Mexican, cilantro and milk in saucepan; stir over low heat until smooth. Pour over meat loaf. 6 servings.
