APRICOT BARS 
3/4 c. butter
1 egg
1/4 tsp. baking powder
1/2 c. chopped walnuts
1 (12 oz.) jar apricot preserves
1 c. sugar
2 c. all-purpose flour
1 1/3 c. shredded coconut
1/2 tsp. vanilla extract

In a large mixing bowl, cream butter and sugar. Add egg; mix well. In separate bowl, combine flour and baking powder. Gradually add to butter mixture. Add coconut, walnuts and vanilla extract; mix thoroughly. Press two-thirds of dough into a greased 13 x 9-inch baking pan. Spread with preserves; crumble remaining dough over preserves.

Bake at 350°F for 30 to 35 minutes or until golden brown. Cool in pan on wire rack. Cut into squares.

Yield: 36 bars.
