APRICOT BARS | |
3/4 c. butter 1 c. sugar 1 egg 2 c. flour 1/4 tsp. baking powder 1 1/3 c. shredded coconut 1/2 c. chopped walnuts 1/2 tsp. vanilla 1 jar (12 oz.) apricot preserves, (I use Smuckers) In a large bowl, cream butter and sugar. Add egg and mix well. In separate bowl, combine flour and baking powder, gradually add to butter mixture. Add coconut, walnuts and vanilla. Mix thoroughly. Press 2/3 of dough into a greased 13 x 9 baking pan. Spread with preserves, crumble remaining dough over preserves. Bake at 350°F for 30 - 35 minutes or until golden brown. Cool in pan on wire rack. Cut into squares. Yield 36 bars. |
