APRICOT CRUNCH BARS 
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 1/2 c. rolled oats
1 c. brown sugar, firmly packed
3/4 c. butter
1 1/2 c. apricot jam
2 tsp. grated lemon peel

Preheat oven to 375°F. Combine flour, baking powder and salt. Stir in oats and sugar. Cut in butter and stir until mixed and crumbly. Pack 2/3 of pastry into bottom of 7 x 11-inch pan. Combine jam and peel; spread over pastry. Sprinkle remaining pastry evenly over top.

Bake 25 minutes and cool in pan. Cut in squares.
