SPINACH SALAD (CENTRAL ITALY) 
Fresh spinach finely chopped or shredded
mushrooms sliced
Parmesan cheese, thinly sliced
Olive oil (3 tbsp.) extra virgin
Balsamic vinegar (2 tsp.)

Make sure spinach and mushrooms are cleaned and completely dry. Combine ingredients. Toss lightly. Serve immediately. Salt and pepper to taste.

Look for aged Parmesan cheese. Better flavor than canned. Extra virgin olive oil is best to use.
