SPINACH CASSEROLE 
3 eggs, beaten
1 lb. cottage cheese
1/2 stick butter, cubed
1 c. Cheddar cheese, cubed
3 tbsp. flour
2 tbsp. sour cream
1 pkg. frozen spinach
Dash or two of Tabasco sauce
Salt and pepper to taste

Beat eggs; add cottage cheese. Add butter and cheese, flour, and sour cream. Cut practically thawed spinach into 1 inch cubes. Add to mixture salt, pepper, and Tabasco sauce. Bake at 350 degrees for 1 hour in well greased casserole. Serves 6.
