CRISPY BATTER FOR FISH 
1 c. flour
2 tsp. baking powder
1 1/4 tsp. salt
2 tsp. sugar
1 tbsp. oil
1 c. water

Mix the ingredients together and coat fish. Deep fry.

This is the best tempura type batter recipe I have ever used! I made this tonight for Sweet and Sour Shrimp and some deep fried mushrooms. We just finished dinner and I had to come back here to comment. This is the lightest, crispiest and tastiest batter I have ever tasted and I am so impressed. Absolutely perfect!
