PEA SOUP 
1 c. dried yellow peas
5 c. cold water
1/4 lb. salt pork, cut into lg. pieces
1/2 onion, minced
1/4 c. minced celery
1 carrot, finely chopped
2 tbsp. minced parsley
1/4 tsp. ground allspice
Salt and pepper

Wash peas, soak overnight in 4 cups water. Boil peas for 10 minutes in water in which they were soaked. Drain well. Add 5 cups water and all other ingredients. Cover, simmer 2 1/2 hours, covered. Remove lid, simmer 30 minutes. Discard floating pork.
