ITALIAN - SEASONED CHICKEN 
3 c. loosely-packed frozen cut broccoli or 3 c. Italian-style mixed vegetables
4 boneless, skinless chicken breasts
2 tbsp. mayonnaise
1/3 c. fine dry Italian-seasoned bread crumbs
3 tbsp. grated Parmesan cheese
1/8 tsp. pepper

In large strainer, rinse vegetables with warm water to thaw slightly. Place vegetables in the casserole dish. Rinse chicken pieces and pat dry. Fold chicken pieces in half, secure with wooden toothpick. Brush chicken on all sides with mayonnaise. Combine bread crumbs and cheese, roll chicken in it. Arrange chicken pieces with the thickest portions toward the edge of the casserole. Sprinkle with paprika. Cook covered in microwave on high for 10 to 12 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
