FRUIT COCKTAIL SURPRISE 
1 pkg. strawberry flavored gelatin
1 3/4 c. water
2 tbsp. lemon juice
1 1/2 c. drained fruit cocktail
1 (8 inch) angel food cake
1 c. whipping cream
2 tbsp. sugar
Fruit cocktail for decoration

Dissolve gelatin in hot water. Blend in lemon juice. Cool until syrupy. Blend in very well drained fruit cocktail. Chill while preparing cake.

Cut a circle 4 inches across out of center of cake. Place cake on serving plate and carefully fill center with almost set fruit-gelatin mixture. Chill in refrigerator several hours or overnight.

Whip cream until stiff and blend in sugar. Spread over top and sides of cake. Decorate top with fruit cocktail. Cut into wedges to serve. Serves about 10.
