ZUCCHINI WITH PESTO 
2 lbs. zucchini, julienned
Olive oil
Pesto sauce (2 tbsp.)
Salt and pepper to taste
Toasted pine nuts, optional for garnish

Saute zucchini in olive oil in a saucepan for 1 to 2 minutes until just tender. Stir in 2 tbsp. pesto and toss well. Season to taste with salt and pepper. Serve sprinkled with a few toasted pine nuts.

This one is also really good with thin spaghetti and zucchini and pesto all mixed together.
