POTATO CASSEROLE 
4 lbs. med. red potatoes, 12 (med.)
1 pkg. (8 oz.) Philly cream cheese
1 carton sour cream (16 oz.)
2 tsp. salt, optional
1/2 + pepper
1 stick butter

Cook potatoes, mash and add rest of ingreients. Beat until light and smooth, add more butter if necessary. Pour in greased casserole, dot with butter. Bake 350 degrees for 30 minutes. If frozen, bake 325 degrees for 1 hour. Serves 10.
