CUBAN CHICKEN 
1 c. raw UNCLE BEN'S® white rice
1/4 c. salad oil
1/4 tsp. black pepper
4 tbsp. minced onion
1/4 tsp. minced garlic
2 c. chicken stock
1 tsp. paprika
2 c. cooked cubed chicken
1 c. slivered ham
1/2 c. sliced stuffed green olives

Heat salad oil and pepper in a large frying pan; add onion, garlic, rice and cook over low heat until yellow. Add stock and paprika. Cover and cook until rice is done. Add boned cubed chicken, ham and olives. Serve on large platter with cooked frozen peas around the rice.
