HERB SQUASH CASSEROLE 
2 lb. squash
1 stick butter, melted
1/2 pt. sour cream
1 (8 oz.) pkg. Pepperidge Farm herb stuffing mix
1 med. carrot, grated
1 med. onion, chopped
1 can cream of chicken soup
Salt to taste

Cook squash until tender; drain well. Combine with other ingredients, mixing well. Pour in greased dish and bake 30-40 minutes at 350 degrees in a 13x15 inch dish. Sprinkle grated cheese before removing.
