TURNIPS AU GRATIN 
4 c. (1 1/2 lb.) pared or cubed fresh turnips
1 tbsp. sugar
1 1/2 tsp. salt
4 tbsp. butter
2 tbsp. flour
1/8 tsp. ground white pepper
1 1/2 c. milk
3/4 c. grated sharp cheddar cheese
1/2 c. pkg. dry bread crumbs

In medium saucepan bring 4 inches of water to boiling. Add turnips, sugar and 1/2 teaspoon of salt. Cover. Cook 12 minutes or until tender; drain. Remove. Set aside. In same saucepan melt 2 tablespoons butter; blend in flour, remaining 1 teaspoon salt and pepper. Cook 1 minute. Remove pan from heat. Gradually stir in milk. Return to heat and cook stirring constantly or until thickens. Add cheese. Put in baking dish over turnips. Put bread crumbs on top. Bake at 350 degrees for 15 minutes or until brown. Yields 6 servings.
