OVER-NIGHT COFFEE CAKE 
2/3 c. soft butter
1 c. white sugar
1 c. brown sugar
2 eggs
1/2 tsp. baking soda
2 c. flour (do not sift)
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 c. milk or buttermilk

Mix butter, sugars and eggs. Add the flour, baking powder, cinnamon and salt. Mix dry ingredients into sugar mixture, just until mixed, do not beat. Add baking soda to milk. Add to above mixture 1/3 at a time and stir as little as possible. Pour into 13 x 9 x 1 inch well greased and floured metal pan or two 8 or 9 inch pans.

TOPPING:

1/2 c. brown sugar
1/2 c. pecans (or any nut)
1/2 tsp. cinnamon
