OATMEAL CHRISTMAS ROUNDS 
1 c. butter
1 c. brown sugar
1 egg
1/2 tsp. vanilla
2 c. flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. oatmeal (quick cook)
1/3 c. sugar

Cream butter and brown sugar. Then beat in egg and vanilla until well blended. Stir together dry ingredients. Add to creamed mixture, blend in oats. Shape dough into small balls, roll in sugar and place on ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes.
