RAISIN FILLED OATMEAL SANDWICH
COOKIES
 
Cookie:

1 c. sugar
1 c. shortening
1/2 tsp salt
1/2 c. sour milk
1 tsp. baking soda, dissolved in
1 tbsp hot water
2 c. quick oatmeal
2 1/4 c. all-purpose flour

Mix ingredients and pat out cookie dough on sheet with glass dipped in flour.

Bake 350°F until edges are lightly browned. Cool.

Raisin Filling:

1 pound raisins, 1 c. boiling water
1 c. sugar with 1 rounded tbsp. of flour stirred in
sprinkle of salt
1 tsp. vanilla

Put raisins and water in kettle. Add pinch of salt and stir until it boils and thickens. Add 1 teaspoon vanilla. Cool and put between cookies.
