BUTTERSCOTCH CRUNCH COOKIES 
2 c. shortening
2 c. brown sugar
2 c. white sugar

2 tsp. vanilla
4 eggs, one at a time

3 c. flour
2 tsp. salt
2 tsp. baking soda

6 c. oatmeal

Mix well. Drop by teaspoons on cookie sheet. Bake at 400 degrees for 10 minutes. I usually add 1 cup coconut, 1/2 cup nuts and 1 small package chocolate chips.
