OATMEAL MUFFINS | |
1 1/2 c. flour 2 1/2 tsp. baking powder 1 tsp. baking soda 3/4 tsp. salt 1/4 c. butter or vegetable oil 1 1/4 c. uncooked quick oatmeal 1 egg, slightly beaten 1 1/4 c. buttermilk 1/4 c. honey 3/4 c. raisins Sift dry ingredients into large mixing bowl. Cut into butter or oil with pastry blender until mixture looks like coarse meal. Stir in oats. Beat egg slightly. Add buttermilk and honey. Stir into dry ingredients. Mix only until blended or just enough to moisten. Fill 12 large well-greased muffin tin cups 2/3 full. Bake at 400 degrees for 18 to 20 minutes or until done. Yield: 12 muffins. Remember over stirring muffins puts peaks on the muffins. Very good. |
