CAROLINA CARROT SALAD 
2 c. grated carrots
1 can (11 oz.) mandarin oranges, drained
1 c. pineapple chunks, drained
1 c. flaked coconut
1/2 c. raisins
1 carton sour cream, 8 oz.
Lettuce

Combine first five ingredients; stir well. Chill for 2-3 hours. Stir in sour cream. Serve on lettuce leaves. 6-8 servings.
