ZUCCHINI CASSEROLE 
1 lb. ground beef
1/3 c. chopped onion
1 clove garlic
2 tbsp. Worcestershire sauce
2 c. tomatoes
3/4 c. raw rice
Salt and pepper to taste
1 c. grated cheddar cheese
1/2 c. shredded Mozzarella cheese
1 c. sour cream
1/2 c. shredded cheddar cheese
2-3 med. zucchini squash

In large skillet, combine beef, onion, and garlic. Brown and drain fat. Add Worcestershire sauce, tomatoes, rice, salt, and pepper. Simmer until rice is tender. Stir in 1 cup cheddar cheese. While meat mixture is cooking, wash and slice zucchini in saucepan; cover with water and cook until slightly tender; drain. Combine remaining cheese and sour cream in a bowl. In a greased 9 x 13 pan, layer meat sauce, zucchini, and cheese mixture. Bake in 350 degree oven for 25-30 minutes. Let set for 5 minutes before serving.
