RHUBARB MUFFINS 
1 1/4 c. brown sugar, packed
2 tsp. vanilla
2 1/2 c. flour
1/2 tsp. salt
2/3 c. sour milk
1 1/2 c. diced rhubarb
1/2 c. oil
1 egg
1 tsp. baking soda
1 tsp. baking powder
1/2 c. nuts

Mix vanilla, sour milk, oil and eggs. Add dry ingredients. Add rhubarb and nuts.

TOPPING:

1 tbsp. butter, melted
2/3 c. brown sugar
1 tsp. cinnamon

Sprinkle on before baking. Bake at 350 degrees for 20-25 minutes. Makes 2 dozen.
