HOMEMADE POTATO AND ONION SOUP | |
A hearty, easy soup for two anytime... 1 potato, peeled and diced 1 onion, diced 2 tbsp. butter 1 tbsp. olive oil 1 tbsp. corn starch (or more to desired thickness) 2 cups water 1 tbsp. chicken flavor bouillon (or enough for 2 cups water) 1 tsp. pepper 1 tsp. thyme 1 bay leaf 1/2 cup milk (add last) In a saucepan add diced potatoes, diced onions, butter and olive oil. Simmer until onions turn translucent. Premix corn starch to warm water and then add to saucepan. Add chicken bouillon, pepper, thyme and bay leaf. Simmer until potatoes are tender, about 10 minutes, then add the milk. Simmer till hot. Note: Taste before adding any salt, because the bouillon usually has plenty in it.
