MICROWAVE TAMALE PIE 
1 sm. box cornbread mix (Jiffy, Martha White)
1 egg
1/3 c. milk
1 lb. ground beef
1/2 lb. sausage
1/2 c. chopped onion
1 clove garlic, minced
1 (16 oz.) can drained corn
1 sm. can tomato paste
1 (16 oz.) can tomatoes, drained and sliced
1 1/2 tsp. chili powder
1 tsp. salt

Mix first 3 ingredients together in a small bowl; set aside. Stir together ground beef, sausage, onion, and garlic in large glass baking dish. Microwave on high 5-9 minutes. Drain and add rest of ingredients. Mix into meat and press into dish. Cover bottom, uniform thickness. Microwave on high 4-8 minutes.

Spread cornbread mixture on top; microwave on medium-high 7 minutes. Increase to high and microwave until cornbread is done, approximately 7 minutes. Then top with 1 cup shredded cheddar cheese. Serve with heated salsa or picante sauce.

Since microwave ovens vary in power, you may need to adjust your cooking time.
