BROCCOLI AND RICE CASSEROLE 
3/4 c. rice (do not use instant rice)
3 tbsp. butter
2 boxes frozen chopped broccoli
1 can cream of chicken soup
1 soup can milk
1 sm. jar Cheez Whiz
1 c. chopped onion
1 c. chopped celery
Salt and pepper
1/2 c. shredded Cheddar cheese

Cook rice and set aside. Thaw broccoli in one cup of water that has been brought to a boil. Saute onions and celery in butter. Add soup and milk, stir for a minute. Add Cheez Whiz. Simmer a minute or so. Add thawed broccoli, rice and seasonings.

Pour into 9x13 pan and top with shredded cheese. Cook 30-40 minutes at 350 degrees. Makes about 10 servings and can be made up ahead of time.
