PINEAPPLE UPSIDE DOWN CAKE 
1 c. brown sugar
1/2 c. butter
1 c. nuts (optional)
No. 2 can pineapple slices
4 egg yolks, beaten
1 c. sugar
3 tbsp. hot water
1/2 tsp. vanilla
1 c. flour
1 tsp. baking powder
4 egg whites, beaten stiff

Put brown sugar and butter in 13 x 9 inch pan and melt in 350 degree oven for few minutes. Sprinkle nuts, arrange pineapple (or peach, apricot) slices in mixture. Beat egg yolks, add sugar, hot water, flour, baking powder and vanilla. Fold in stiffly beaten egg whites. Bake in moderate oven (350 degrees) for 30 minutes. Cool for 10 minutes in pan, then turn out on platter. Serve plain or with whipped cream. Package of white cake mix may be used over fruit.
