ORANGE AND ONION SALAD 
3 lg. oranges
1 lg. onion
1 c. heavy cream
1 tsp. salt
1/4 c. maple syrup
Boston lettuce

Peel oranges, remove white pith. Slice into six pieces. Peel large onion, cut in 12 very thin slices.

Whip heavy cream with salt until cream is very stiff. Stir in maple syrup. Arrange orange slices and 2 onion slices on lettuce on individual salad plates. Spoon dressing over each.
