2 tsp. crushed New Mexican chili, seeds included
2 Chorizo sausages, skinned and chopped
1/2 c. chopped onion
1 clove garlic, minced
1 lg. tomato, peeled and chopped
Pinch of sugar
6 eggs, slightly beaten

Saute onion in butter until soft. Add garlic and sausage and continue cooking for 5 minutes. Add tomatoes and sugar and cook for an additional five minutes or until most of the liquid has been absorbed. Slowly stir in eggs and cook until eggs are set and done. Serves 4.
