GREEN BEAN CASSEROLE 
7 c. cooked green beans (French style if preferred)
2 tbsp. butter
1 c. sour cream
1/2 c. minced onion
1 tbsp. finely chopped parsley
1 tsp. salt
1/4 tsp. black pepper
1 tsp. grated lemon peel
1/2 c. grated sharp cheese
1 tbsp. butter
Cracker crumbs

Melt butter in saucepan; add flour. Blend and cook a few seconds. Add sour cream and blend. Add chopped onion, salt, pepper, and lemon peel; mix this sauce with the green beans and pour into a buttered casserole.

Sprinkle cracker crumbs, which have been crushed, over the top and then sprinkle the grated cheese over crumbs. Dot with the 2 tablespoons of butter. Bake at 350 degrees about 25 minutes.
