HONEY BAKED HAM | |
1 country style or Virginia ham Place the ham, fat side up, in a roasting pan. Do not add water. Bake, uncovered, at 300°F. After 60 minutes, insert an instant read thermometer at the center of the largest muscle. Cook until the thermometer registers an internal temperature of 170°F. Approximately 25 to 30 minutes per pound should be allowed for baking time. Continue to check the temperature occasionally throughout the cooking. Before the ham is done, take from the oven and remove the rind. Slash fat into squares (marking a pattern like TIC-TAC-TOE). Insert a whole clove into the center of each square. Pour honey glaze over ham. Return to oven to finish baking. Baste frequently. GLAZE: 1 cup pureed apricots or pineapple (canned) 2 cloves garlic 1 cup honey 1/4 cup maraschino cherries (optional) Process 1 cup drained pitted (canned) apricots or pineapple in a blender with 2 cloves garlic until smooth. Add 1 cup honey. For added color, you can optionally add 1/4 cup maraschino cherries, if desired. Maraschino cherry halves may also be pinned down with the cloves into the center of each square carved on top of the ham for a more festive presentation. Use this honey glaze to baste the ham. |
