2 lbs. lean pork, cut in 1/2 sqs. 3 onions, chopped 3 cloves garlic, peeled and sliced 1 tbsp. chili powder 1/2 tsp. coriander (optional) 3 tsp. salt 1 can green chilies, chopped 2 qts. water 1 can hominy Combine all ingredients except hominy and bring to a boil in a large cooking pot. Reduce heat to simmer. Simmer 1 or 1 1/2 hours or until meat is tender, adding more water to keep soupy. Add drained hominy. Taste for seasoning. Serve hot. |
