ELSAH LANDING'S CHICKEN AND
DRESSING SOUP
 
3 c. water or to cover
1 quartered onion
1 bay leaf
1/4 c. chopped parsley
1/4 c. chopped celery leaves
1 chicken breast

Cook chicken in water with seasonings until tender..r Remove chicken, chop meat, strain and reserve liquid.

1 c. diced celery
1 c. diced onion
2 tbsp. butter
3 c. fresh white bread crumbs

Saute onion and celery in butter until soft. Do not brown. Add bread crumbs and more butter, if needed. Stir until well coated. Combine with reserved broth.

1 tsp. sage
1 tsp. pepper
1 tsp. poultry seasoning
2 tbsp. chicken stock base
2 c. evaporated milk

Add milk. stir. Heat to simmer. Add more water if too thick. Taste for seasonings. Garnish with parsley, if desired. 4 to 6 servings.
