FRUITED OAT QUICK CAKE 
1 1/2 c. all-purpose flour
1 1/4 c. Quick Quaker oats
1/4 c. sugar
1 tbsp. baking powder
1/4 tsp. salt
1/3 c. butter
16 oz. pkg. (1 1/3 c.) diced mixed dried fruit
1/2 c. milk
1 egg, slightly beaten
1 tsp. sugar
1/8 tsp. cinnamon

(May just use raisins and dates.)

Heat oven to 350 degrees. Combine flour, oats, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in fruit, add combined milk and egg, mixing just until moistened.

Shape dough to form a ball. Turn out on lightly floured surface. Knead gently about 6 times. Put in an 8x8 pan. Pat down dough in pan, put sugar and cinnamon on top of cake. Bake 20 to 25 minutes until golden brown.
